Recipe 3 – Avocado Pasta
Avocado is such a big thing for Millennials that they started putting it into their pasta dishes. For this recipe, cook your pasta and set it aside. You can eat this dish hot or cold. If eating hot, make your sauce while your pasta cooks.
You will need:
- 1 very ripe avocado peeled and stoned.
- 25ml of olive oil
- 25g of parmesan
- 25g fresh basil
- 25g cilantro (optional)
- 2 garlic cloves
- A squirt of lime juice
- Seasoning
For the method, simply roughly chop your avocado until it is small enough to break down with a fork. Add all the ingredients together in a bowl. Remove your pasta and add it to the mix (because pasta goes into the sauce, not the other way around), and eat hot or cold as required.
