Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup frozen peas (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and ground beef, cooking until the beef is browned and the onions are soft. Drain excess fat.
  3. In a large bowl, combine the cooked beef mixture, rice, beef broth, cream of mushroom soup, garlic powder, salt, and pepper. Stir in the peas if using.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Spread evenly.
  5. Cover with foil and bake for 30 minutes. Remove the foil, sprinkle with cheddar cheese, and bake for another 10-15 minutes, until the cheese is melted and bubbly.
